Ingredients

Nonstick cooking spray

6 corn tortillas

12 tsp paprika

2 tsp canola oil

1 lb ground turkey breast

12 cup chopped onion

12 (15-oz) can low-sodium pinto beans, drained

2 cups frozen, whole-kernel corn

1 tsp cumin

1 tsp chili powder

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 cup chopped red bell pepper

1 cup chopped green bell pepper

4 chopped tomatoes

12 cup chopped cilantro

14 cup lime juice

8 cups salad greens

14 cup salsa

12 cup low-fat sour cream

Directions

Preheat oven to 400°F.

1. Spray a large baking sheet with nonstick cooking spray. Set aside.

2. Cut the corn tortillas into 12-inch strips and lay them on the baking sheet without overlapping them.

3. Lightly spray the strips with nonstick cooking spray and sprinkle with paprika. Bake for 10 to 12 minutes or until crisp.

4. Meanwhile, spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add the canola oil. When hot, add the ground turkey and onion. Stir and cook for 6 to 8 minutes or until turkey is cooked through.

5. Add the corn, cumin, chili powder, and salt-free seasoning. Stir and cook 2 to 3 minutes. Remove from heat and set aside.

6. In a medium-size bowl combine the peppers, tomatoes, cilantro, and lime juice. Mix well.

7. Place salad greens on 4 large plates and divide ground turkey mixture and tomato mixture on top of the greens.

8. Add the baked tortilla strips on the side and top with salsa and sour cream.
