Ingredients

2 cups firmly packed fresh spinach leaves

1 cup firmly packed fresh basil leaves, divided

34 cup Parmesan cheese, divided

12 cup walnuts

1 tbsp olive oil

1 garlic clove

Dash red pepper flakes

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

2 tbsp water

8 oz whole wheat-penne pasta, cooked according to directions without salt or fat

20 cherry tomatoes, sliced in half

Directions

1. To make the pesto, combine spinach, 34 cup basil, 12 cup cheese, walnuts, olive oil, garlic, pepper flakes, salt-free seasoning, salt, and water in a food processor. Process about 1 minute until smooth.

2. In a large bowl, combine cooked hot penne pasta, cherry tomatoes, and walnut pesto mixture. Toss to mix well.

3. Top with remaining 14 cup basil leaves and 14 cup cheese.
