- Preheat oven to 375°F.
- Prepare
Oven-Roasted Potatoes recipe according to directions. - Meanwhile, in a shallow bowl combine olive oil and chicken broth. Set aside.
- In another shallow bowl combine almonds, bread crumbs, salt, and thyme.
- Dip the chicken breasts in the olive oil mixture and coat with the almond mixture.
- Spray a medium-size baking dish with nonstick cooking spray. Place chicken in the dish.
- Lightly spray the top of each chicken breast with cooking spray and pour any extra olive oil mixture over the top.
- Bake for 30 to 35 minutes. Serve chicken with Oven-Roasted Potatoes.
- Makes 4 servings.
