Almond-crusted Chicken With Potatoes

  1. Preheat oven to 375°F.
  2. Prepare Oven-Roasted Potatoes recipe according to directions.
  3. Meanwhile, in a shallow bowl combine olive oil and chicken broth. Set aside.
  4. In another shallow bowl combine almonds, bread crumbs, salt, and thyme.
  5. Dip the chicken breasts in the olive oil mixture and coat with the almond mixture.
  6. Spray a medium-size baking dish with nonstick cooking spray. Place chicken in the dish.
  7. Lightly spray the top of each chicken breast with cooking spray and pour any extra olive oil mixture over the top.
  8. Bake for 30 to 35 minutes. Serve chicken with Oven-Roasted Potatoes.
  9. Makes 4 servings.
