Apple-cinnamon Bread Pudding

  1. Preheat oven to 350°F.
  2. Spray an 8 x 8 baking dish with nonstick cooking spray. Combine the bread cubes and apple pieces and spread the mixture evenly in the dish. Set aside.
  3. Add enough water to the milk to make 2 cups of liquid. In a large bowl, combine the liquid with egg substitute, brown sugar, vanilla, 1 tsp cinnamon, and nutmeg.
  4. Pour liquid over bread and apple mixture. Sprinkle with remaining 1/2 tsp cinnamon.
  5. Bake 35 to 40 minutes or until an inserted knife comes out clean.
  6. To serve, sprinkle with powdered sugar.
  7. Makes 6 servings.
