  1. Preheat oven to 400°F.
  2. Spray a 9 x13 baking dish with nonstick cooking spray. Place cod fillets in the dish.
  3. Top with tomatoes, garlic, olive oil, lemon juice, salt-free seasoning, basil, olives, cheese, and 1/4 cup parsley.
  4. Bake 20 minutes or until fish flakes easily with a fork.
  5. Serve baked cod with hot rice and top with remaining 1/4 cup parsley.
  6. Makes 4 servings.
