Baked Snapper With Orange Mango Sauce

  1. Preheat oven to 375°F.
  2. Spray a medium-size baking dish with nonstick cooking spray. Place snapper fillets in the dish.
  3. Pour 1/4 cup orange juice over fillets. Cover. Bake for 20 to 25 minutes or until fish flakes easily with fork.
  4. Meanwhile, in a small bowl combine the remaining 3/4 cup orange juice and cornstarch.
  5. In a small saucepan over medium heat, add orange juice mixture, marmalade, and diced mango. Stir and cook 3 to 4 minutes to thicken. Set aside. Keep warm.
  6. Remove the snapper fillets from baking dish with a slotted spoon. Serve the orange-mango sauce over the fillets and top with almonds. Serve with hot rice.
  7. Makes 4 servings.
