Beef On Skewers With Mushroom Pilaf

  1. Place sirloin strips on skewers. Place in a shallow dish. Set aside.
  2. In a small bowl combine reduced-sodium soy sauce, 1 tbsp olive oil, and garlic. Pour over beef. Cover. Refrigerate for 20 minutes, turning occasionally.
  3. Meanwhile, spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add remaining olive oil. When hot, add onions and pepper. Sauté for 1 to 2 minutes.
  4. Add mushrooms and sauté for 2 to 3 minutes.
  5. Add peas, parsley, salt, and salt-free seasoning. Stir for 2 to 3 minutes. Add cooked rice. Mix well and stir 1 to 2 minutes to heat through. Remove from heat. Cover to keep warm.
  6. Spray broiler pan rack with nonstick cooking spray. Place skewers on rack. Brush beef with any leftover soy sauce mixture.
  7. Broil 4 to 5 inches from the heat source for 8 to 12 minutes. Turn often.
  8. Serve beef skewers with mushroom pilaf.
  9. Makes 4 servings.
