Black Bean and Swiss Chard Stew

  1. Spray a large pot with nonstick cooking spray. Place the pot over medium-high heat and add olive oil. When oil is hot, add onion and garlic. Cook 1 to 2 minutes.
  2. Add broth, water, tomato paste, potatoes, diced tomatoes, black beans, garlic powder, onion powder, oregano, and salt-free seasoning. Bring to a boil. Cover. Reduce heat to simmer and cook 20 to 25 minutes.
  3. Add Swiss chard and cook 5 minutes longer. Top each serving with chopped tomatoes.
  4. Makes 4 servings.
