Broiled Salmon With Raspberry Sauce

  1. In a small saucepan over medium heat combine vinegar, sugar, jam, lemon juice, and lemon zest. Stir with a wire whisk for 2 to 3 minutes. Remove from heat and set aside. Keep warm.
  2. In a small saucepan, add chicken broth. Bring to a boil and add couscous and onions. Cover. Remove from heat and let sit for 5 minutes. Fluff and mix with a fork. Keep warm.
  3. Spray broiler pan with nonstick cooking spray. Place fillets in the pan and sprinkle with salt-free seasoning on each side.
  4. Broil 5 minutes per side, 5 to 6 inches from the heat source.
  5. Heat prepared raspberry sauce until warm.
  6. Serve hot couscous with salmon fillets topped with raspberry sauce and almonds.
  7. Makes 4 servings.
