Broiled Salmon With Vegetable Medley Low Carb

  1. In a small bowl combine mayonnaise, sour cream, pepper, and dill. Set aside.
  2. Spray a broiler pan with nonstick cooking spray. Place fillets on pan and sprinkle with salt-free seasoning on each side.
  3. Broil 5 minutes per side, 5 to 6 inches from the heat source.
  4. Spray a large skillet with nonstick cooking spray. Place over medium-high heat and add olive oil. When hot, add onions. Sauté for 1 to 2 minutes.
  5. Add carrots, broccoli, cauliflower, and water. Cover. Cook 4 to 5 minutes or until vegetables are tender.
  6. Add salt and parsley and toss to mix well.
  7. Top salmon with prepared dill topping and serve with vegetable mixture, hot rice, and lemon wedges.
  8. Makes 4 servings.
