Butternut-swiss Chard Ragout

  1. In a small skillet, over medium-low heat, toast pine nuts for 4 to 6 minutes, stirring often. Set aside.
  2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add garlic, onion, bell pepper, and mushrooms. Cook 3 to 4 minutes.
  3. Add squash, zucchini, tomatoes, and 1/4 cup water. Bring to a boil. Cover. Reduce heat to simmer and cook 10 minutes.
  4. Add artichoke hearts, wine, basil, salt-free seasoning, salt, Swiss chard, and remaining 1/4 cup water. Cover. Cook 5 to 6 minutes longer.
  5. Serve ragout over hot fettuccine and top with toasted pine nuts.
  6. Makes 4 servings.
