  1. In a large bowl, combine the soy sauce, ginger, sugar, wine, 1/4 cup water, cornstarch, and tofu. Mix well and set aside.
  2. Over medium-high heat, in a large skillet sprayed with nonstick cooking spray, add canola oil. When hot, add the onion, garlic, and mushrooms. Stir-fry for 1 to 2 minutes.
  3. Add the carrots, asparagus, snow peas, spinach, and remaining 1/4 cup water. Cover. Cook for 2 to 3 minutes or until vegetables are tender.
  4. Add the soy sauce/tofu mixture to the skillet and stir for 3 to 4 minutes to thicken and heat through.
  5. Top with cashews and serve over hot rice.
  6. Makes 4 servings.
