Crustless Spinach and Salmon Quiche

  1. Preheat oven to 350°F.
  2. Spray a deep-dish pie pan or medium-size baking dish with nonstick cooking spray. Set aside.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add onion, mushrooms, and bell pepper. Sauté for 2 to 3 minutes. Remove from heat.
  4. Transfer mixture to a large bowl and add spinach, milk, egg substitute, Bisquick, and salt-free seasoning. Mix well and gently stir in salmon. Pour into baking dish.
  5. Top with Parmesan cheese and bake 30 minutes. Add the mozzarella cheese on top and bake 5 to 10 more minutes. Let sit 5 minutes before serving.
  6. Makes 4 servings.
