Dijon Pork Chops With Mashed Potatoes

Directions

  1. Prepare Seasoned Mashed Potatoes recipe according to directions.
  2. Meanwhile, in a small bowl combine the mustard, vinegar, water, salt-free seasoning, and oregano. Set aside.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp canola oil. When hot, add the pork chops and cook 3 to 4 minutes on each side to brown. Transfer pork chops to a plate. Set aside.
  4. Add remaining 1 tsp of canola oil to the skillet. When hot, add the onions and sauté 2 to 3 minutes or until soft. Push the onions to the side of the skillet and return pork chops to the center.
  5. Spread the mustard mixture over the pork chops. Cover. Reduce heat to low and cook 6 to 8 minutes. Top with parsley and serve with seasoned mashed potatoes.
  6. Makes 4 servings.
