Honey Chicken and Red Peppers Over Rice

  1. In a small bowl, combine honey, lemon juice, 1/4 cup water, cornstarch, salt-free seasoning, and salt. Set aside.
  2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1/2 tbsp canola oil. When oil is hot, add chicken strips and cook 4 to 5 minutes until cooked through.
  3. Add onions and bell pepper strips. Cook 1 to 2 minutes and add remaining 1/4 water. Cover and cook 1 minute or until peppers are tender.
  4. Add honey-lemon mixture and cook 1 to 2 minutes to heat through.
  5. Serve over hot brown rice.
  6. Makes 4 servings.
