Honey-mango Chicken With Brown Rice

  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1/2 tbsp olive oil. When oil is hot, add chicken pieces and cook 4 to 5 minutes until cooked through. Remove from skillet. Set aside and keep warm.
  2. Add remaining 1/2 tbsp olive oil to the skillet along with the garlic, onions, and ginger. Stir-fry 1 minute.
  3. In a small bowl, combine the honey, water, lime juice, cornstarch, and salt-free seasoning. Add to the skillet with the cooked chicken pieces.
  4. Add tomatoes, mango pieces, and 1/4 cup cilantro. Stir and cook 1 to 2 minutes to heat through.
  5. Serve over hot brown rice and top each serving with remaining cilantro.
  6. Makes 4 servings.
