Lemon Parmesan Chicken With Potatoes

  1. Preheat oven to 375°F.
  2. Prepare Seasoned Mashed Potato recipe according to directions.
  3. Meanwhile, in a shallow bowl, combine the bread crumbs, cheese, and salt-free seasoning. Set aside.
  4. In another shallow bowl, combine the olive oil, lemon juice, lemon zest, and sugar. Set aside.
  5. Dip chicken breasts in the olive oil mixture and then press in the bread crumb mixture.
  6. Spray a medium-size baking dish with nonstick cooking spray. Place the chicken in the dish.
  7. Lightly spray the top of each chicken breast with cooking spray and pour any extra olive oil mixture over the top.
  8. Bake for 30 to 35 minutes.
  9. Top chicken breasts with parsley and serve with lemon wedges and seasoned mashed potatoes.
  10. Makes 4 servings.
