Pork Fried Rice With Pineapple

  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp canola oil. When hot, add pork pieces. Cook 4 to 5 minutes or until cooked through. Transfer pieces to a plate. Set aside and keep warm.
  2. Add 1 tsp canola oil to the skillet and when hot, add onions, garlic, and celery. Stir-fry 1 to 2 minutes.
  3. Add mushrooms and stir-fry 2 minutes.
  4. Move mushrooms to the edge of the skillet and add egg substitute. Stir mixture 1 to 2 minutes continuously until cooked.
  5. Add carrots, peas, and water. Cover. Cook for 2 to 3 minutes or until vegetables are tender.
  6. Mix in a small bowl the soy sauce, ginger, and sugar. Add to the skillet, along with the pineapple, pork, and rice. Stir and cook 2 to 3 minutes to heat through.
  7. Makes 4 servings.
