Salmon and Spinach With Angel Hair

  1. Preheat oven to 400°F.
  2. Spray a medium-size baking dish with nonstick cooking spray. Place the salmon fillet in the dish.
  3. Drizzle with 1 tbsp olive oil and sprinkle with 1/2 tsp salt-free seasoning. Bake uncovered 12 to 16 minutes or until fish flakes easily with fork.
  4. Remove the fillet from oven and flake into small pieces. Set aside and keep warm.
  5. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add remaining 1/2 tbsp olive oil. When oil is hot, add onions, garlic, and bell pepper. Sauté 1 to 2 minutes.
  6. Add mushrooms and sauté 1 minute.
  7. Add spinach leaves and stir 1 to 2 minutes or until leaves begin to wilt. Remove from heat and set aside.
  8. Place hot pasta in a large serving bowl and add flaked salmon, spinach mixture, 1/4 cup Parmesan cheese, remaining 1/2 tsp salt-free seasoning, and feta cheese. Toss to mix well.
  9. Top each serving with remaining Parmesan cheese and parsley.
  10. Makes 4 servings.
