Salmon Patties With Skillet Cabbage

  1. In a large bowl, combine salmon, 1/2 cup onions, 1/2 cup bell pepper, parsley, onion powder, 1/2 tsp salt-free seasoning, bread crumbs, and egg substitute. Mix with a spoon or your hands until mixture sticks together. Form into 4 large patties. Set aside.
  2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tbsp canola oil. When oil is hot, add salmon patties and cook 3 to 4 minutes on each side or until browned.
  3. Place another large skillet over medium-high heat and add remaining 1/2 tbsp canola oil. When oil is hot, add remaining 1/2 cup onions and 1/2 cup bell pepper. Cook 1 to 2 minutes.
  4. Add the shredded cabbage, pepper, salt, and water. Cover. Reduce heat to medium and cook 8 to 10 minutes or until cabbage is tender.
  5. Serve salmon patties over cabbage topped with parsley and lemon wedges on the side.
  6. Makes 4 servings.
