Savory Lentil and Fruit Curry Over Rice

  1. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-high heat and add olive oil. When oil is hot, add onion and cook 1 minute.
  2. Add apples, bananas, water, lentils, sugar, curry powder, cumin, and raisins. Bring to a boil. Cover. Reduce heat to simmer and cook 30 to 35 minutes or until lentils are tender.
  3. Serve over hot brown rice and top with apricots, peanuts, and cilantro.
  4. Makes 4 servings.
