Seasoned Collard Greens With Skillet Chicken

  1. Prepare Corn Muffins recipe according to directions.
  2. In a very large pot, layer half the collard greens, smoked turkey, onion, and garlic. Layer the other half of these ingredients and add the broth, 2 cups water, pepper flakes, and pepper. Bring to a boil. Cover. Reduce heat to simmer and cook greens for 50 to 60 minutes.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When oil is hot, add chicken breasts. Cook 3 to 4 minutes on each side to brown.
  4. Add bell pepper, tomatoes, onion powder, thyme, oregano, salt, uncooked rice, and remaining 2 cups water to skillet. Bring to a boil. Cover. Reduce heat to simmer and cook 45 minutes or until rice is done.
  5. Drain the cooked collard greens and serve with skillet chicken.
  6. Makes 4 servings.
