Sesame Beef and Broccoli Stir-fry

  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add sesame seeds. Cook 3 to 6 minutes, stirring often until sesame seeds are lightly browned and toasted. Remove from skillet and set aside.
  2. In a small bowl combine beef broth, soy sauce, and cornstarch. Set aside.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp canola oil. When hot, add beef strips and stir-fry 4 to 5 minutes or until beef is cooked through. Remove beef from skillet. Set aside.
  4. Add remaining canola oil. When hot, add garlic and onion. Stir-fry 1 to 2 minutes.
  5. Add peppers and stir-fry 2 minutes.
  6. Add carrots, broccoli, and water. Cover. Cook 4 to 5 minutes or until broccoli is tender.
  7. Add beef strips back along with the corn and beef broth/soy sauce mixture.
  8. Stir and cook 1 to 2 minutes or until liquid is thickened and stir-fry is heated through.
  9. Serve over hot rice and top with toasted sesame seeds.
  10. Makes 4 servings.
