  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add chicken. Cook 3 to 4 minutes on each side until browned.
  2. Add onion, celery, basil, tomatoes, chicken broth, and uncooked rice.
  3. Bring to a boil. Cover. Reduce heat to a simmer and cook 30 to 35 minutes or until rice is cooked.
  4. Top each serving with cheese.
  5. Makes 4 servings.
