Snapper With Mushrooms and Swiss Chard

  1. Preheat oven to 375°F.
  2. Spray a medium-size baking dish with nonstick cooking spray. Place the sliced mushrooms on the bottom of the dish.
  3. Lay the snapper over the mushrooms. Set aside.
  4. In a small bowl combine the tomato, onions, mayonnaise, and dill. Mix well and spoon over fillets. Cover. Bake for 20 to 25 minutes or until snapper flakes easily with a fork.
  5. Meanwhile, in a large pot add Swiss chard and water. Bring to a boil. Cover. Cook for 5 to 7 minutes, stirring often until leaves are tender. Drain well.
  6. Serve the snapper fillets with the hot rice and Swiss chard. Spoon the mushrooms and sauce from the baking dish over the rice. Add lemon wedges on the side to squeeze over Swiss chard.
  7. Makes 4 servings.
