Spicy Black Bean Tamale Pie

  1. Preheat oven to 375°F.
  2. In a large saucepan over high heat, add water and salsa. Bring to a boil, and add cornmeal slowly. Reduce heat to medium and cook 5 to 7 minutes, stirring continually until thickened. Remove from heat and set aside.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion and bell pepper. Cook 2 minutes. Add corn, chili powder, onion powder, tomato sauce, and black beans. Cook 1 minute longer and remove from heat.
  4. Spray a medium-size baking dish with nonstick cooking spray. Spoon the bean mixture into the dish. Press the mixture flat with the back of a large spoon and top with 1/4 cup of mozzarella cheese.
  5. Spoon the cornmeal mixture over the beans and smooth out evenly. Top with remaining 1/4 cup cheese. Bake for 30 minutes.
  6. Top each serving with cilantro.
  7. Makes 4 servings.
