Spicy Sweet Potato-turkey Chili

  1. Spray a large pot with nonstick cooking spray. Place the pot over medium-high heat and add canola oil. When oil is hot, add the ground turkey, onion, garlic, bell pepper, and celery. Stir and cook 5 to 6 minutes or until turkey is cooked through.
  2. Add chili powder, cumin, onion powder, salt, tomato paste, salsa, corn, kidney beans, water, and sweet potatoes. Bring to a boil. Cover. Reduce heat to simmer and cook 25 to 30 minutes.
  3. Top with cilantro.
  4. Makes 4 servings.
