Sweet and Sour Tofu Stir-fry

  1. In a small bowl, combine soy sauce, sugar, pineapple, cornstarch, and 1/4 cup water. Set aside.
  2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When oil is hot, add onion, garlic, and celery. Stir-fry 1 to 2 minutes.
  3. Add mushrooms and tofu and stir-fry 2 to 3 minutes.
  4. Add carrots, broccoli, cabbage, and 1/4 cup water. Cover and cook 3 to 4 minutes or until vegetables are tender.
  5. Add prepared soy sauce mixture and stir 1 to 2 minutes until thickened and heated through.
  6. Serve with hot brown rice.
  7. Makes 4 servings.
