  1. In a bowl combine the peanut butter, hot water, vinegar, honey, soy sauce, and red pepper flakes. Mix well. Set aside.
  2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add the onions, pepper, and tofu. Sauté for 2 to 3 minutes.
  3. Add the broccoli and sauté for 2 minutes.
  4. Pour the peanut butter mixture over the vegetables and tofu. Cover. Cook for 3 to 4 minutes or until vegetables are tender.
  5. Serve over hot rice.
  6. Makes 4 servings.
