Tuna Steaks With Pasta Primavera

  1. Prepare Marinara Sauce according to directions. Set aside.
  2. Spray a large skillet sprayed with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp olive oil. When hot, add tuna steaks and cook 3 to 5 minutes on each side until cooked through. Remove from skillet. Set aside and keep warm.
  3. Add remaining 1 tsp olive oil to the skillet and when hot, add the onions and mushrooms. Sauté for 2 minutes.
  4. Add zucchini, squash, and water. Cover and cook for 3 to 4 minutes or until tender.
  5. Add oregano, artichoke hearts, and Marinara Sauce to skillet. Cook for 2 to 3 minutes to heat through.
  6. Serve tuna steaks with hot fettuccini pasta and vegetable mixture topped with Parmesan cheese.
  7. Makes 4 servings.
