Turkey Cutlets With Cinnamon Raisin Sauce

  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1/2 tbsp canola oil. When hot, add the turkey cutlets and cook 5 to 6 minutes on each side or until cooked through.
  2. Remove turkey cutlets from the skillet. Set aside. Keep warm.
  3. Add the remaining 1/2 tbsp canola oil, onions, and pepper. Sauté for 1 to 2 minutes.
  4. Add the chopped apple, chicken broth, brown sugar, cinnamon, allspice, and raisins. Bring to a boil. Reduce heat slightly and simmer for 3 to 4 minutes.
  5. Add the turkey cutlets back to the skillet to heat through.
  6. Serve cutlets with hot rice and spoon the apple-raisin sauce over the top.
  7. Makes 4 servings.
