  1. Prepare Oven-Roasted Potatoes recipe according to directions.
  2. Meanwhile, in a small saucepan combine the vinegar, sugar, jam, lemon zest, and lemon juice. Bring to a boil, then remove from heat and set aside.
  3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add the turkey cutlets and cook 5 minutes on each side or until cooked through.
  4. Spoon raspberry-lemon sauce over turkey cutlets and serve with Oven-Roasted Potatoes.
