Directions

  1. Preheat oven to 400°F.
  2. Spray a large baking sheet with nonstick cooking spray. Set aside.
  3. Cut the corn tortillas into 1/2-inch strips and lay them on the baking sheet without overlapping them.
  4. Lightly spray the strips with nonstick cooking spray and sprinkle with paprika. Bake for 10 to 12 minutes or until crisp.
  5. Meanwhile, spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add the canola oil. When hot, add the ground turkey and onion. Stir and cook for 6 to 8 minutes or until turkey is cooked through.
  6. Add the corn, cumin, chili powder, and salt-free seasoning. Stir and cook 2 to 3 minutes. Remove from heat and set aside.
  7. In a medium-size bowl combine the peppers, tomatoes, cilantro, and lime juice. Mix well.
  8. Place salad greens on 4 large plates and divide ground turkey mixture and tomato mixture on top of the greens.
  9. Add the baked tortilla strips on the side and top with salsa and sour cream.
  10. Makes 4 servings.
