  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add onions and sauté for 2 minutes.
  2. Add corn, zucchini, and water. Cover. Cook 3 to 4 minutes or until zucchini is tender.
  3. Add protein crumbles, beans, onion powder, chili powder, and salt-free seasoning. Stir and cook 3 to 4 minutes to heat through.
  4. Fill the taco shells and top each with tomatoes, salsa, cheese, and lettuce.
  5. Makes 4 servings.
