White Wine Mushroom Sauce Over Chicken Breasts

  1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add chicken breasts. Cook 3 to 4 minutes on each side to brown.
  2. Add mushrooms, onions, pepper, chicken broth, and white cooking wine. Reduce heat to low. Cover. Simmer for 15 to 20 minutes until chicken is cooked through.
  3. Mix the cornstarch with the water and add to the skillet. Add salt. Stir and cook for 2 to 3 minutes to thicken sauce.
  4. Serve chicken over hot pasta and spoon the mushroom mixture over the top.
  5. Top each serving with cheese and parsley.
  6. Makes 4 servings.
